Keto Grilled Caesar Salad

We went to Mexico recently and I ate every single amazing homemade tortilla chip in sight. I also discovered a ridiculously amazing grilled Caesar salad, which I was thrilled to be able to recreate once we got home. No tortilla chips here, just delicious healthy keto goodness. As usual, you can get every single ingredient for a great price at my favorite veg keto supply store, Trader Joe’s. Summer is ON.

INGREDIENTS

  • Hearts of Romaine – about one per person
  • Olive oil & aminos for basting – I use Trader Joe’s coconut aminos. Soy sauce can do here too, but it can contain trace amounts of flour for thickening
  • Trader Joe’s Caesar Dressing – or any other full fat vegetarian Caesar dressing you like. 
  • Shaved or grated fresh parmesan cheese
  • Sliced avocado
  • Feta cheese crumbles (optional)
  • Slivered almonds (optional but so good for crunch)
  • Capers (optional)

MAKE IT

Turn on your grill to medium. You want it hot but not scorching because lettuce ain’t no steak.

Mix olive oil and aminos to create a baste for your romaine. Baste each heart of romaine in lots of oil and aminos to protect it from scorching.

Grill the romaine hearts about five minutes or so per side. Watch them closely and ddjust the time to make sure your lettuce is grilled but not burned. 

Take the romaine hearts of the grill and plate for serving. Pour dressing over top, then garnish with cheese, almonds, avocado, capers and anything else you like. If you are appeasing the demands of meat eaters, you could add bacon and or grilled chicken here too. I have chives blooming in my garden right now and sprinkled some of the blossoms on top for pretty and delicious purple garnish. Enjoy!
