Hello Sunshine: Keto Arugula & Macadamia Salad
Sometimes, I ain’t got no time for that. Often, actually. But I still have to eat something healthy. Enter this magical salad. Super fast, satisfying and delicious. Fresh lemon juice makes it taste bright and full of sunshine. Don't use that bottled stuff instead of fresh lemon. You can't bottle sunshine, but you can transport it in a real lemon. This salad is all the things, and you can make it in fewer than five minutes. Go.
INGREDIENTS
- About 3 cups of arugula
- About ½ cup of shredded or shaved parmesan cheese (shaved cheese be fancy, yo)
- Handful of macadamia nuts
- ¼ lemon
- 1-2 tbsp olive oil
- Pinch of salt
MAKE IT
Put your greens in a bowl.
Juice your lemon. Pick out any seeds. They’re bitter like a scorned lover and you don’t need that kind of pain in your salad. Mix lemon juice with olive oil and a little salt because salt makes everything taste that little bit more amazing.
Toss the greens with the dressing, then add the cheese and blend some more. Pour into a bowl and put your macadamias on top. This salad is also good topped with boiled egg, but unless you have some pre-boiled, that process would take you over the five minute mark and I don’t want to lie to you about how fast and easy it is to whip up this healthy, exotic salad that will fuel you for hours.
